Think of all the colorful fruits and vegetables, the endless flavors, and the healing nurturing it gives you everyday. Don't be intimidated by new cooking ideas, instead embrace your imagination and cook with love! I know, I know, it sounds like a cliche, but think of all those times you cooked with confidence and as a result of it, you were showered with compliments. A great recipe to practice this concept is squash. It's believed that squash was originated in South America, probably Chile or Peru, but are cultivated in most parts of the world. They are rich in vitamin A, Vitamin C, copper, Vitamin B6, omega-3 fatty acids, dietary fibre and manganese. So, with this one ingredient, you can fill your body with antioxidants and anti-inflammatory properties. You have to try this!
Squash
Tools needed
Non Stick Sauce Pan
Spatula
Cutting Board
Pairing Knife
Total time: 30 minutes
Yield: 3-4 servings
Ingredients
5 squash-sliced
1 purple or yellow onion
2 table spoons of extra virgin olive oil
pinch of salt and pepper
1 lime (optional)
You will love how easy it is to make this side dish: Slice the squash and onions, toss them in the extra virgin olive oil, sprinkle the salt and pepper, cook on medium to high for about 5-7 minutes. When you hear the sizzle, turn the heat down to low to medium and cook for 20 minutes.
For extra flavor, squeeze a bit of lime before serving.
